Hong Kong Slow Food Dinner
¡§The Cuisine of the Shun Tak Region¡¨
This is another Slow Food Dinner celebrating the regional cuisines of
China. This time the food region is
closer to home as we explore the food ways of Shun Tak cooking. One of the special features of the
evening is the chance to enjoy Shun Tak food in almost its heartland, or close
enough - in the private clubrooms of the Shun Tak Association of Hong
Kong. Those who know this private
club know how authentic the food is and how hard it is to get a tavle!
Shun Tak cuisine ("Shunde") has long been widely regarded as the
basis for exquisite Cantonese cuisine. While the cuisine of Guangzhou has been
historically very minimalist in the use of flavorings, food from Shun Tak is celebrated
for its liberal use of ingredients such as sun dried tangerine peel and dates,
resulting in simple but powerful flavors.
Situated in the Pearl River Delta, Shun Tak cuisine has easy access to a
wide range of river water or fresh water delicacies. One of the dishes: "Braised Pomelo
Skin with Shrimp Roe" is a fusion of both. In addition, the region is well known
for its dairy-based dishes. Buffalo and cow milk is a famous specialty of Shun
Tak¡¦s Daliang sub-district.
One of the traditional dishes is "Daliang Stir-fried
Milk". The milk becomes solid
when mixed with egg whites and then stir-fried, the snow-white mixture remains
slippery smooth and soft, but is firm enough to be picked up and eaten with
chopsticks.
Many of the dishes appear as humble, home-style cooking, but the
preparation techniques and careful balances of tastes and texture require
experience and extensive culinary skills.

accept CASH. Also, there are
insufficient western wine glasses and ice buckets. Hence, the corkage is free, but please advise your guests to bring their own wine glasses.
